WHITE OF CHIOGGIA ONION

This variety takes its name from the small city built on the Venetian Lagoon in the province of Venice. The Chioggiotta onion is linked to a local method of conserving fish called "saor" which is consists of marinating a base of oil, vinegar, and a generous portion of onion in which the fish (le sardelle) is placed (previously breaded and fried). This onion has a large bulb, squeezed dimensions, with white layers. Good shelf-life, it needs rich soils that are absolutely absent of waterlogging.

Description:

White bulb, flattened shape, and of medium size, its internal layers are thick, white, and lightly spicy. It is sown from July to September for harvest in May. Its shelf-life is limited and is produced for fresh markets for spring-summer consumption.
