KHOLRABI

The edible part of kohlrabi is the stem, which swells to form a sphere on which the leaves are inserted.
The plant's stem is substantially swollen and can reach a weight of 100 gr. In regions with mild winter climates, this variety is transplanted in late summer and is ready to be harvested, depending on the earliness of its cycle, from November until late winter. The edible part can be eaten raw in salads, or even boiled. Typical of German cuisine, there are many recipes to try, like the one in which it is diced and stewed with sugar, cream, and flour, or else baked and stuffed with dried fruit, garlic and onion, and even as part of a soup.
