BRUSSEL CABBAGE

Plants with great development that produce buds along their stems, the bud being the edible part, which is harvested periodically. This plant can have an early or late cycle, depending on the cultivar. In relation to the latter, in areas not too cold, the plants can be planted from June to July for harvest from October to late February. The harvest is made when the buds reach the size of a walnut and the leaf tends to yellow. In cuisine, they are served boiled and steamed gratin-baked with butter and parmesan or gorgonzola, or in bowl with white sauce, bacon, and cheese.
