TURNIP TOPS

Plants that produce several inflorescences (more or less loose), which are harvested with a number of their top leaves intact. Once the upper part has been severed, the plant resprouts additional shoots which can in turn be harvested. Depending on the cultivar, there may be early and late varieties. In southern and central regions of Italy, summer crops can be harvested from October to February-March. In cuisine, they can be boiled and dressed with olive oil and lemon, or sautéed with garlic and extra virgin olive oil directly in the pan.
