GIANT CAULIFLOWER OF NAPLES

The Giant Cauliflower of Naples presents a white inflorescence which can reach large sizes. Its cycle may be early with harvest in autumn, or even late, depending on the cultivar (January, February, March, April). It is important to harvest this plant at the right moment of ripeness because, once this period is over, the white inflorescence tends to become yellow immediately. Its typical culinary preparation consists of boiling it, but it is also the main ingredient in typical Neapolitan dishes such as salad and pasta with cabbage.
